Instant Pot Roast

Ingredients:

  • 1-2 lbs beef chuck roast

  • 1 Yellow Onion

  • Spinach or greens of choice

  • Beef or chicken broth/buillon base

  • Salt

  • Pepper

  • Water

Equipment:

  • Instant pot pressure cooker

Directions:

  1. Preheat instant pot on the ‘sear’ setting

  2. Pat beef dry, then sprinkle with salt

  3. Pour a small amount of oil into the pot, then sear lightly on both sides.

  4. Switch to the pressure cook setting for meat

  5. Add in your onions, water and bouillon base or broth. Season with salt and pepper as needed.

  6. Cover and seal the vent. Cook for the designated cooking time.

  7. Once timer goes off, open the vent with a long spoon/handle and let the steam release

  8. When the roast is done the beef should easily pull apart with a fork. If it’s tough, continue cooking until tender.

  9. Stir in spinach or any greens you have on hand.

  10. Serve!
