Blueberry Date Compote

Ingredients:

  • 1 Cup frozen blueberries - This is also delicious with peaches or raspberries

  • 1 tsp to 1 tbsp Date Syrup

  • Water

  • Optional spices; cinnamon, clove, nutmeg

Directions:

  1. Pour blueberries into a small pot over medium low heat with a small splash of water

  2. Heat slowly while stirring frequently

  3. Add in your date syrup and continue to stir as the water evaporates and the juice thickens

  4. Heat until warmed through, water is evaporated, and you have a thickened sauce

  5. Taste and adjust ingredients as needed, add more water to loosen or continue heating to thicken

  6. Serve! This is perfect for pancakes, waffles, and collagen buckwheat porridge. Don’t forget to add a source of protein and greens to make it a meal!
