Chickpea Chicken Pasta
Ingredients:
- Chicken breast 
- 2-3 cloves garlic (adjust to your taste) 
- 1 small onion 
- 2 large roma tomatoes 
- Fresh basil 
- 1 cup crimini mushrooms 
- 2 large handfuls spinach 
- 1 large lemon - juice and zest 
- Flaky salt, pepper 
- 1 nob of butter 
- Olive oil 
- Asparagus served on the side or any veggies you have on hand 
Directions:
- Preheat pan on medium and add 1-2 tbsp olive oil. 
- Dice chicken breasts into small 1 inch cubes. Add chicken to pan, season with salt and pepper. 
- Zest the lemon and set zest aside. Squeeze juice from 1/2 of the lemon into the pan while chicken is cooking. 
- Once cooked through, remove chicken breast from the pan and place aside into a separate dish. 
- Cook the pasta while preparing the veggies. 
- Add a nob of butter, sliced garlic, and diced onion into the pan. Cook until slightly softened and fragrant. 
- Add in sliced mushrooms and cook until golden brown. 
- Throw in chopped tomato and cook until softened. 
- Squeeze the second half of the lemon juice into the pan, add spinach and basil in with the veggies. 
- Toss in the chicken, pasta, and stir. 
- Sprinkle with lemon zest, basil, optional flaky salt and serve.
