Spicy Cucumber Salad

Ingredients:

  • 3-4 Persian Cucumbers

  • Toasted sesame oil

  • Gochugaru chili flakes

  • GF soy sauce or tamari

  • Rice wine vinegar

  • 1 small Garlic clove, finely chopped

  • Chili oil

Directions:

  1. Wash and slice the cucumbers into about 1/2 inch thick slices.

  2. Add cucumber and some salt into a bowl and toss to combine well. Set this aside in the fridge for 15 minutes.

  3. In a separate bowl, combine gf soy sauce or tamari, vinegar, sesame oil, garlic, chili oil, and gochugaru. Mix well. Adjust measurements to taste.

  4. Drain the water from the cucumber, add the dressing and toss well. Optional to sprinkle with toasted or plain sesame seeds. Serving the day of is best.
