Spicy Cucumber Salad
Ingredients:
- 3-4 Persian Cucumbers 
- Toasted sesame oil 
- Gochugaru chili flakes 
- GF soy sauce or tamari 
- Rice wine vinegar 
- 1 small Garlic clove, finely chopped 
- Chili oil 
Directions:
- Wash and slice the cucumbers into about 1/2 inch thick slices. 
- Add cucumber and some salt into a bowl and toss to combine well. Set this aside in the fridge for 15 minutes. 
- In a separate bowl, combine gf soy sauce or tamari, vinegar, sesame oil, garlic, chili oil, and gochugaru. Mix well. Adjust measurements to taste. 
- Drain the water from the cucumber, add the dressing and toss well. Optional to sprinkle with toasted or plain sesame seeds. Serving the day of is best.
